Gold Rush Cocktail Recipe: The Ultimate Whiskey Sour Variation

The Gold Rush cocktail has become a modern classic in the world of mixology. With its origins at the now-closed Milk & Honey bar in New York City, this cocktail has captured the hearts (and palates) of many cocktail enthusiasts around the world.

The story of the Gold Rush begins with T.J. Siegal, a lifelong restaurant worker who found himself looking for a job. Worried that potential employers might perform a quick Google search of his name before calling him in for an interview, Siegal decided to conduct a search himself to see what would come up. To his surprise, all the results were about a drink – the Gold Rush cocktail.

Intrigued by this discovery, Siegal embarked on a journey to learn more about the cocktail and its origins. He soon found out that the Gold Rush was a simple variation of the classic Whiskey Sour. What set it apart was the use of honey syrup instead of the traditional simple syrup. This gave the drink a unique and delicious twist.

Gold Rush Cocktail Background

The Gold Rush gained its popularity at Milk & Honey, a bar opened in 1999 by Siegal’s childhood friend, Sasha Petraske. With its philosophy of not having a set menu, customers at Milk & Honey could order any drink they desired. This open-ended approach allowed Siegal to experiment with his Bourbon Sour and create the now-famous Gold Rush.

The idea for the Gold Rush came to Siegal while he was sitting at the bar after a long shift, enjoying his usual Bourbon Sour on the rocks. Petraske mentioned a honey syrup he had crafted for another cocktail, and Siegal suggested using it in his Bourbon Sour as a replacement for simple syrup. The result was an instant success. The rich and smooth flavors of the bourbon paired perfectly with the sweetness and depth of the honey syrup, creating a cocktail that was both balanced and satisfying.

As word got around about the Gold Rush, it became a favorite among whiskey enthusiasts. At Milk & Honey, where there was no menu, the Gold Rush was often suggested as a “bartender’s choice.” By early 2002, it had become a staple at the bar and a drink that patrons sought out.

The critical acclaim for this cocktail came not only from its popularity among customers but also from the efforts of Toby Maloney, the first bartender Petraske hired. Maloney played a significant role in developing the signature honey syrup used in the cocktail. Instead of a simple equal-parts mixture, Maloney created a rich syrup consisting of three parts honey to one part water. This approach allowed the honey flavors to shine through and elevate the Gold Rush to new heights.

The Gold Rush Cocktail Today

With its growing popularity, the Gold Rush quickly spread beyond Milk & Honey to other bars and establishments. Petraske himself introduced the cocktail to venues he opened, such as the iconic Little Branch in Manhattan, Dutch Kills in Queens, and The Varnish in Los Angeles. This broad platform allowed this cocktail to gain traction and become a beloved drink in the cocktail scene.

Since its creation, the Gold Rush has seen several variations and adaptations. Some bartenders have incorporated allspice dram or seasonal fruits to add their own twist to the cocktail. But for many purists, the original recipe remains sacred – a testament to the perfect balance of bourbon, lemon juice, and honey syrup.

Today, the Gold Rush continues to enchant cocktail enthusiasts across the globe. It is frequently enjoyed at the cultural successor to Milk & Honey, Attaboy, where it can be prepared using the regal shake technique invented by bartender Theo Lieberman. This technique, specifically designed for drinks featuring honey, enhances the cocktail’s texture and flavor.

The enduring popularity and success of this cocktail can be attributed to its simplicity, balance, and the creative minds behind its creation. It serves as a reminder that sometimes all it takes is a small tweak to a classic recipe to create something extraordinary.

  • ¾ oz fresh lemon juice
  • ½ oz simple syrup
  • ¼ oz maple syrup
  • 1 egg white

Instructions

  • Prepare the Glass: Begin by chilling a rocks glass in the freezer or by filling it with ice water. A cold glass ensures your cocktail stays refreshing from the first sip to the last.
  • Dry Shake: In a cocktail shaker, combine the bourbon, fresh lemon juice, spiced simple syrup, maple syrup, and the egg white. Give it a vigorous dry shake (without ice) to emulsify the egg white, creating a rich and frothy texture.
  • Add Ice and Shake Again: Add ice to the shaker and shake the mixture again. The ice helps chill the cocktail while maintaining the delightful foaminess from the egg white.
  • Strain Into Glass: Discard the ice from the chilled rocks glass and strain the cocktail into it. The absence of ice in the serving glass ensures a more concentrated flavor profile.

Watermelon Whiskey Sour Slush

Summer is the perfect time to experiment with new cocktail recipes, and what spells summer more than FRESH WATERMELON (literally my favorite food) and an ice cold cocktail to cool down on a hot day? If you’re a fan of whiskey sour variations and love watermelon, you’ll love this Watermelon Whiskey Slush recipe! It’s a perfect combination of sweet and sour, with a kick of bourbon that makes this drink the ultimate summer cocktail.

Tips:

To make simple syrup, combine equal parts water and granulated sugar in a saucepan over medium heat. Stir until the sugar dissolves, then remove from heat and let cool before using. (I’m also a big fan of this simple syrup recipe, if you’re looking to make your own syrup.)

Why Watermelon Schnapps?

Using fresh watermelon for cocktails is great, but it can be messy and time-consuming, and add a strange grainy consistency to your cocktail. That’s why we recommend using watermelon schnapps instead. Not only does it have the same fresh and fruity taste, but it’s also a lot easier to work with. Plus, using watermelon schnapps will give you a more consistent flavor in your cocktails. We tried this recipe with fresh watermelon initially, but the consistency from the fiber in the watermelon itself made this cocktail a little awkward to handle.

Watermelon Schnapps may sound like an exotic ingredient, however you should be able to pretty easily find DeKuyper Pucker Watermelon Schnapps at many liquor stores.

Logan Roy Scotch Sour

Are you a fan of the hit HBO series “Succession”? If you’re anything like me, you’re probably obsessed with the Roy family and their lavish lifestyle. And what’s more luxurious than sipping on a fancy cocktail while watching the show? That’s why I’ve created the perfect cocktail to accompany your next “Succession” binge-watch: the Roy Family Sour.

I decided to go with Scotch as the core ingredient for this recipe to honor our favorite anti-hero: Logan Roy. As show nerds are all aware, Logan Roy was born in Scotland, and his scotch-based drink is a tribute to our dearly-departed patriarch.

Scotch Sour Flavor Profile:

The sweet and sour elements of this cocktail are perfectly balanced, making it a drink that’s both refreshing and complex. And the dash of orange bitters adds a subtle hint of spice that perfectly complements the scotch.

This drink is a spin on the classic whiskey sour, featuring the smooth and complex flavors of Lagavulin 16-year-old scotch. If you really don’t like the smoky taste of Islay Scotch and still really want a lavish cocktail, I highly recommend swapping in Macallan 12-year or Macallan 18-year scotch (if you can afford it). Macallan is much less smoky, and will still get you the flavor depth we know and love with scotch.

A note on honey syrup: This cocktail uses honey syrup, a relatively uncommon household cockail ingredient. Don’t let that intimidate you. Here’s how to make it:

To make honey syrup, combine equal parts honey and hot water in a mixing glass or jar. Stir until the honey is completely dissolved.

Instructions

  • Add ice to the shaker and shake vigorously for 10-15 seconds to chill and dilute the cocktail.

And there you have it – the perfect cocktail for any “Succession” fan is a Scotch Sour. Whether you’re watching the latest episode or re-watching the entire series, the Roy Family Sour is sure to elevate your viewing experience.

If you’re having a watch party, be sure to make a big batch of this cocktail – it’s sure to be a hit with all your fellow “Succession” fans. And if you’re feeling extra fancy, serve it in a rocks glass with a monogrammed napkin, just like the Roy family would. If you’re feeling extra-extra fancy and have some disposable income, you can also take a shot at mixing Hank Pierce’s Break Bumper, which will set you back something like $350 in raw ingredients for a cocktail alone.

Bourbon Blackberry Whiskey Sour

This is one of the greatest summertime whiskey sour variations you’ll ever find. If you’re looking for a delicious and refreshing cocktail to sip on, or if you have way too many blackberries from your nearest pick-your-own farm, you can’t go wrong with a Blackberry Whiskey Sour. This recipe combines the sweetness (and tartness!!) of fresh blackberries with the bold flavor of whiskey, and a hint of citrus. In my opinion, this creates a perfectly balanced drink that’s perfect for the outdoors or your next beach vacation.

To make this cocktail, you’ll need just a few simple ingredients: fresh blackberries, whiskey, lemon juice, simple syrup, and ice. The combination of blackberries and whiskey may seem unconventional, but trust me – it’s a match made in cocktail heaven! If you haven’t made a whiskey sour before, and want to try a base cocktail before you go into this variation, I highly recommend our basic whiskey sour recipe.

To start, muddle a handful of fresh blackberries in the bottom of a cocktail shaker. Add the whiskey, lemon juice, and simple syrup, along with a handful of ice. Shake vigorously for about 10-15 seconds, until the cocktail is well mixed and chilled.

Next, strain the mixture into a rocks glass filled with ice. Garnish with a fresh blackberry or two, and a sprig of fresh mint, if desired. And that’s it – you’re ready to enjoy your delicious Blackberry Whiskey Sour!

Equipment

  • 1 Cocktail Shaker
  • 1 muddler

Ingredients

  • 8 fresh blackberries
  • 2 oz whiskey
  • 1 oz lemon juice
  • 1 oz simple syrup
  • fresh mint garnish
  • ½ glass ice

Instructions

  • In a cocktail shaker, muddle the fresh blackberries.
  • Add the whiskey, lemon juice, simple syrup, and ice.
  • Shake vigorously for 10-15 seconds, until well mixed and chilled.
  • Strain the mixture into a rocks glass filled with ice.
  • Garnish with a fresh blackberry and a sprig of fresh mint, if desired.

Whiskey Sour Variations:

  • For a sweeter version, add an additional 1/2 oz. of simple syrup.
  • For a stronger version, add an additional 1 oz. of whiskey.
  • Sparkling Blackberry Whiskey Sour – Top off your Blackberry Whiskey Sour with 1/2 cup of a nice sparkling water like Topo Chico. This will make the drink wonderfully bubbly.
  • Blended Blackberry Whiskey Sour – Buy frozen blackberries (or freeze your handpicked berries), double the amount of blackberries you add to this cocktail, and blend with ice. Once the blackberries are broken up in your blender, add whiskey, simple syrup, and lemon juice.
  • Peach Whiskey Sour – You literally can’t get more summery than this. Our peach whiskey sour recipe is a great variation on this cocktail.
  • Maple Whiskey Sour – This variation provides a wonderful alternative sweetener to the Whiskey Sour, in the form of maple syrup. Maple Whiskey Sour recipe here.

Blackberry Whiskey Sour Tips:

  • Blackberries – I always recommend fresh-picked blackberries for this recipe. But if you don’t have these on-hand, go for frozen blackberries at the grocery store. Do not get non-frozed blackberries from the store unless you know exactly how long they’ve been sitting on the shelf. (Learning about the nutritional difference between frozen and fresh fruit is a fascinating rabbit hole).
  • Whiskey – I recommend using a mellow, wheated whiskey like Makers Mark or Weller Special Reserve (if you can get your hands on it). The flavor profile of many aged and oaky bourbons might class with the tartness of the blackberries. (Liquor.com has a great rundown of the best wheated bourbons to get here.)
  • Adjust the sweetness and strength of the cocktail to your liking.
  • Serve over ice for a refreshing summer cocktail.

So there you have it – a delicious and easy recipe for a Blackberry Whiskey Sour that’s sure to impress. Whether you’re sipping it on your front porch on a warm summer evening, or serving it up to guests at your next dinner party, this cocktail is the perfect way to enjoy the bold flavor of whiskey with a fruity twist.
